- Whole Milk: Warm to 100–110ºF for activating the yeast. You can substitute lower-fat milk, but the rolls will be slightly less tender.

- Whisk warm milk, 1 tablespoon sugar, and yeast in a mixing bowl. Cover and let sit 6–8 minutes until foamy.
- Add remaining sugar, softened butter, honey, salt, and flour. Knead until the dough is smooth and pulls away from the bowl (about 5–7 minutes with the proper attachments).
- Remove dough, lightly grease the bowl, return the dough, spray the top, and cover. Let rise 1–2 hours until doubled.
- Deflate the dough, roll to about an 8″ × 12″ rectangle, and cut into 12 pieces. Shape each into a ball by folding seams underneath and rolling on the counter.
- Place rolls on a greased quarter-sheet pan, cover, and let rise 30–45 minutes until doubled.
- Brush with egg wash and bake at 350ºF for 25–28 minutes until golden. Brush with honey butter after baking if desired.

- 2 tbsp Granulated Sugar, divided
- 3 tbsp Unsalted Butter, room temperature
- 3 tbsp Honey
- 1/2 tsp Salt
- 3 cups + 1 tbsp All-Purpose Flour

- 1 large Egg
- 1 tbsp Water
Honey butter topping (optional)
- 3 tbsp Unsalted Butter, room temperature
- 1 tbsp Honey
Instructions
- In the stainless steel bowl of your mixer, whisk the warmed milk, 1 tbsp sugar, and instant yeast. Cover and let sit 6–8 minutes until foamy.
- Add remaining sugar, softened butter, honey, salt, and all-purpose flour.
- Attach the dough roller and scraper, then knead on low until the dough is soft and smooth, about 5–7 minutes.
- Remove the dough, lightly grease the bowl, return the dough, spray the top, and cover. Let rise 1–2 hours or until doubled.
- Deflate the dough, transfer to a lightly floured surface, and roll to an 8″ × 12″ rectangle. Cut into 12 pieces.
- Shape each piece into a ball by folding seams underneath and rolling with a cupped hand.
- Place rolls on a greased quarter-sheet pan, cover, and let rise 30–45 minutes until doubled.
- Preheat oven to 350ºF. Brush tops with egg wash (1 egg + 1 tbsp water) and bake 25–28 minutes until golden.
