This chewy chocolate slice is packed with coconut and finished with a sweet, fudgy chocolate icing. It’s perfect with your morning or afternoon coffee — or whenever you want an easy, chocolatey treat. 
Since moving to Australia a few months ago, I’ve noticed nearly every café and bakery offers a selection of “slices.” Back in North America I’d call these dessert bars, but here there are many varieties you don’t often see at home — caramel slices, oat slices and more. I wanted to try them all, so here’s the first instalment: chocolate coconut slice.
This version is soft and chewy with lots of coconut texture in the base and a glossy, fudgy chocolate icing on top. The icing is spread while the bars are still warm so it melts slightly into the base, creating a rich, unified bite.
Chocolate Slice Recipe

This recipe is simple and requires no mixer — just basic pantry ingredients. The chocolate-coconut base is a straightforward melt-and-stir batter: whisk melted butter with brown sugar and an egg, then fold in cocoa, baking powder, flour and desiccated coconut. Press the mixture into a lined pan and bake until just set.
The icing is an easy chocolate fudge made by combining icing (powdered) sugar and cocoa, then whisking in melted butter, boiling water and a little golden syrup (or corn syrup). The boiling water helps achieve a smooth finish, and the syrup adds shine; it’s optional if you don’t have it on hand. Spread the icing over the warm bars, sprinkle with extra coconut, and allow everything to cool so the icing sets.
These slices make a great afternoon snack, lunchbox treat, or coffee accompaniment. Highlights of the recipe:

Chocolate Slice
- 2/3 cup unsalted butter, melted
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup plain (all-purpose) flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 cup desiccated coconut
Chocolate Icing
- 1 1/2 cup icing (powdered) sugar
- 1/4 cup cocoa powder
- 2 tablespoons unsalted butter, melted
- 2 tablespoons boiling water
- 1 tablespoon golden syrup, (or corn syrup; optional)
- 2 tablespoons coconut, for sprinkling
Instructions
Chocolate Slice

Preheat the oven to 350°F (180°C).

Line an 8×8 inch (20×20 cm) pan with parchment, leaving an overhang for easy removal.

In a medium bowl whisk together the melted butter, brown sugar, egg and vanilla.

Stir in the flour, cocoa, baking powder and desiccated coconut until combined.

Spoon the mixture into the prepared pan and smooth the top. Bake for about 30 minutes or until just firm to the touch.
Chocolate Icing

Sift the icing sugar and cocoa into a medium bowl.

Whisk in the melted butter, boiling water and golden syrup until smooth and glossy.

Spread the icing over the warm bars and sprinkle with the extra coconut.

Allow the bars to cool completely and the icing to set before slicing. Chill for 30 minutes to speed up setting if desired.
