I have fond memories of my grandmother making confetti squares. They’re straightforward to prepare, very sweet, and have a soft, chewy texture that instantly brings back childhood. These bars feel indulgent and slightly nostalgic—comfort food in the best way.
The recipe is simple and uses just four ingredients:
- 1/4 cup butter
- 1 cup peanut butter
- 1 bag butterscotch chips
- 4–5 cups rainbow marshmallows

Regular marshmallows work fine, but the multicolored (rainbow) marshmallows give these bars their “confetti” look and add a playful, nostalgic touch. The flavor is similar to scotcheroos—peanut butter and butterscotch—but these bars stay soft and chewy rather than crunchy, with extra sweetness from the marshmallows.

How to Make Confetti Squares
Start by lining an 8×8 or 9×9 inch pan with aluminum foil and lightly greasing it.
In a medium saucepan over low heat, melt the butter, peanut butter, and butterscotch chips together. Heat slowly and stir frequently until the mixture becomes smooth and creamy. Alternatively, you can melt the ingredients in the microwave on medium power in 45-second intervals, stirring between each interval.
Remove the pan from heat and let the mixture cool to room temperature. Cooling is essential—if you add the marshmallows while the mixture is still hot, they’ll melt and the texture will become an undesired sticky mess.
Pro tip: For extra gooey bars, use 4 cups of mini marshmallows instead of 5.
When the chocolate-peanut butter-butterscotch mixture is cool, fold in the marshmallows until evenly coated. Press the mixture into the prepared pan, smoothing the top with a spatula or the back of a spoon. Chill in the refrigerator for about 1–2 hours until the bars set. Once firm, lift the foil from the pan and slice into squares.
