Ingredients

For the Crumb Layers

  • 1 and 1/4 cup all-purpose flour, spooned & leveled
  • 1 cup old-fashioned rolled oats, not quick oats or instant oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup melted butter, cooled to room temperature
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1 large egg yolk
  • 1 tablespoon flour
  • 1 tablespoon brown sugar

For the Apple Layer

  • 2 large apples, cored, peeled and sliced about 1/4 inch thick
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons cornstarch

Instructions

  • Preheat the oven to 350°F (175°C). Line an 8×8 or 9×9 inch square pan with aluminum foil and lightly grease or spray the foil.
  • In a large bowl, whisk together the flour, oats, cinnamon, and salt. In a separate bowl, whisk melted butter with 3/4 cup brown sugar, vanilla, and the egg yolk. Stir the wet mixture into the dry ingredients until the mixture resembles damp sand with some larger clumps. Reserve one heaping cup of this mixture for the crumble, and press the remainder evenly into the bottom of the prepared pan.
  • Toss the sliced apples with the granulated sugar, cinnamon, nutmeg, and cornstarch until evenly coated. Spread the apples in a single, even layer over the pressed oat base.
  • Combine the reserved cup of oat mixture with the extra tablespoon of flour and tablespoon of brown sugar. Crumble this mixture over the apples, aiming for a mix of large and small crumbs. Bake for about 30 minutes, or until the top is beginning to turn golden brown.
  • Allow the bars to cool completely before slicing into squares. Reheat gently if you prefer to serve them warm.
