Ingredients You Need

The ingredients pictured below make these warm, fudgy, better-than-box-mix brownies. The bulleted items are the key ones that need more explanation.

Ingredients in various size bowls labeled as vegetable oil, semi sweet chocolate chips, granulated sugar, vanilla extract, unsweetened cocoa powder, baking powder, salt, eggs, sea salt flakes (topping), chopped walnuts, all purpose flour, and unsalted butter on a white marbled background.
  • All-Purpose Flour. King Arthur is my all-time favorite brand, but use whichever one you like best!
  • Vegetable Oil. This helps keep the brownies fudgy. Coconut oil, such as Carrington Farms, works too.
  • Vanilla Extract. I used Trader Joe's bourbon vanilla extract, but regular pure vanilla extract or vanilla paste works just as well.
  • Unsalted Butter. If all you have is salted butter, leave out the separate salt called for in the batter.
  • Semi-Sweet Chocolate Chips. Ghirardelli and ALDI semi-sweet chips and chunks have worked well for me. For a low-sugar, dairy-free choice, try Hu Kitchen chocolate chips. They're really good.
  • Unsweetened Cocoa Powder. You can use Dutch-processed cocoa powder instead for an even richer, darker brownie.
  • Espresso Powder. This one is optional, but it adds real depth to the flavor. I used Delallo Foods espresso powder, though dry instant coffee works too.
  • Sea Salt Flakes. Also optional, and not the same as the table salt used in this recipe. Sea salt flakes are best sprinkled on top.

Ingredients

  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/8 tsp Salt
  • 2 Large Eggs, room temperature
  • 1 Large Egg Yolk, room temperature
  • 1 cup Granulated Sugar
  • 1 tbsp Vegetable Oil
  • 1 tsp Vanilla Extract
  • 6 tbsp Unsalted Butter
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tsp Espresso Powder, optional
  • 1 cup Chopped Walnuts, optional
  • Sea Salt Flakes, for topping

Method

  1. Move the oven rack to the 2nd level from the top (just above center) and heat the oven to 350ºF. Spray an 8-inch square baking pan with flour-based baking spray and set it aside.
  2. In a medium bowl, whisk the all-purpose flour, baking powder, and salt together. Set aside.
  3. Using a hand mixer or a stand mixer with the paddle attachment, beat the eggs, egg yolk, granulated sugar, vegetable oil, and vanilla extract on medium-high speed until fully combined and frothy.
  4. In a small saucepan over medium heat, melt the semi-sweet chocolate chips and unsalted butter together until smooth. Take it off the heat and quickly whisk or stir in the unsweetened cocoa powder and espresso powder.
  5. Slowly pour the melted chocolate into the wet ingredients and mix until just combined.
  6. Mix in the whisked dry ingredients on low speed until just combined, then add the chopped walnuts. A spatula also works well for folding both in.
  7. Spread the brownie batter evenly in the prepared 8-inch pan, then top with extra chopped walnuts and sea salt flakes if you like.
  8. Bake 25-28 minutes at 350ºF, or until the top looks shiny and crackly.
  9. Take them out of the oven and let them cool completely before cutting into squares.
  10. Cooled brownies can be covered with aluminum foil and kept at room temperature overnight, or stored in a sealed container in the refrigerator. If you stack layers of brownies in a container, separate them with wax or parchment paper.
