How to Make the Recipe
Step 1. Make the cookies. Use your favorite chocolate chip cookie recipe; my Super Soft Chocolate Chip Cookies work perfectly. Bake and cool the cookies. Store them in an airtight container until ready to assemble.
Step 2. Make the no-churn chocolate ice cream. Melt the bittersweet chocolate in a double boiler or microwave and let it cool slightly.
Step 3. Whip the cream. Whisk cold heavy whipping cream with a handheld or stand mixer on medium-high until soft peaks form.
Step 4. Fold in sweetened condensed milk and flavoring. Reduce the mixer speed, add cold sweetened condensed milk, then increase speed and whip until thick with stiff peaks. Add vanilla and the cooled melted chocolate, mixing until well combined.
Step 5. Freeze the ice cream. Transfer the mixture to an airtight container or a pan lined with parchment and freeze at least six hours or overnight until firm.
Ice Cream Sandwich Assembly
When the ice cream is firm, scoop about 1/4 cup onto the flat side of one cookie, then top with a matching cookie and press gently to create a sandwich. Roll the edges in chocolate jimmies, crushed cookies, chopped nuts, or pretzels if desired.

Homemade no-churn chocolate ice cream
- Melt the chocolate in a double boiler over low heat or in the microwave, then set aside to cool.
- Whisk cold heavy whipping cream on medium-high until soft peaks form.
- Reduce speed and add cold sweetened condensed milk, then increase speed and whip until thick and forming stiff peaks. Add vanilla.
- Mix in the cooled melted chocolate until fully blended.
- Transfer to an airtight container or lined pan and freeze at least 6 hours or overnight until firm.
