What Makes These Special

The taste. Sea salt flakes, coconut, chocolate chips, and pecans come together with sweetened condensed milk over a buttery graham cracker crust. It's a truly delicious treat!

Perfectly chewy. These magic cookie bars have a creamy, chewy top of caramelized coconut flakes, chocolate chips, and chopped pecans. A little crumble from the graham cracker crust on the bottom adds texture. They turn out absolutely wonderful!

Super simple to make. This recipe needs just 7 ingredients, takes 20 minutes or less to assemble, and bakes in under 25 minutes. To shave off even more prep time, use ready-made graham cracker crumbs!

The one drawback is that these bars need to cool to room temperature before you serve them, but trust me, the wait is worth it. You can keep the bars in an airtight container and enjoy them later, too!

Ingredient Checklist

Here's everything you'll need to make these easy 7-layer magic cookie bars!

  • Graham Cracker Crumbs. If you're crushing graham cracker sheets yourself, you'll need about 18 full sheets, or 2 cups of crumbs. Store-bought graham cracker crumbs work too and save you some prep time.
  • Unsalted Butter. Melt 1/2 cup, then stir it into the graham cracker crumbs.
  • Semi-Sweet Chocolate Chips. Use 1 cup of your favorite brand. I reach for Guittard or Ghirardelli.
  • Coconut Flakes. I use 1 cup of organic unsweetened coconut flakes, which keeps the sweetness in check just a little!
  • Chopped Pecans. Measure out 1 cup of chopped pecans. For more flavor, toast them lightly before spreading them over the chocolate chip layer.
  • Sweetened Condensed Milk. Use one 14-ounce can of this sugary staple. It is not the same as evaporated milk.
  • Sea Salt Flakes. This optional garnish goes on after you pour the sweetened condensed milk over the top. Malden is my go-to brand for flaky sea salt for topping. Don't swap in table salt or kosher salt.

Ingredient Swaps

Graham Crackers. I went with honey-flavored graham crackers, but if you want more chocolate flavor, try the chocolate version.

Chocolate Chips. Feel free to mix semi-sweet and milk chocolate chips, or chop up a dark chocolate bar into chunks.

Nuts. Chopped walnuts or slivered almonds can stand in for the pecans.

Baking Tools

The best part of this easy magic cookie bars recipe is that you won't need any mixer at all! Here's what I used:

8-inch Square Baking Pan. My go-to pans are from USA Pans. They're well made and handle all my baking beautifully! A 9-inch pan works too, but the bars will come out thinner.

Food Chopper or Food Processor. Use it to grind the graham crackers into fine crumbs. Skip this if you're buying ready-made graham cracker crumbs.

Mixing Bowl. I stirred the graham cracker crumbs and melted butter together in a glass bowl. If you're using a food processor, you can mix them right in there instead.

Spatulas. Perfect for stirring the graham cracker base and spreading the sweetened condensed milk.

Let's Get Baking

Here's a quick overview of how to make these easy 7-layer magic cookie bars. For the full recipe, see the recipe card below.

STEP 1. Make the graham cracker crust. Stir the crumbs and melted butter together in a mixing bowl, or in a food processor if you used one to crush the crackers.

STEP 2. Press the mixture into the prepared 8-inch pan. I smooth it with the bottom of a measuring cup and use a spatula to tidy the edges and press them down.

STEP 3. Layer on the toppings. Scatter the chocolate chips over the graham cracker crust, then add the chopped pecans and coconut flakes.

STEP 4. Pour on the sweetened condensed milk. Drizzle it over the coconut, then spread it evenly with a spatula. Finish with a sprinkle of sea salt flakes.

STEP 5. Bake, then cool. Bake the magic bars for 20-25 minutes in a 350ºF preheated oven, until the top is lightly golden. Mine are done right around 23 minutes, when just the edges turn a light golden color.

STEP 6. Let the bars cool fully on a wire rack before serving. Alternatively, once they've cooled, cut them into squares and store them in an airtight container with layers of wax or parchment paper between them. Serve chilled or at room temperature.

Frequently Asked Questions

What size baking pan did you use?

I baked these in this 8-inch USA pan. It's my favorite pan for most of my dessert bar recipes!

Do I need to spray the 8-inch baking pan with a baking spray?

Yes, grease it with a flour-based baking spray, such as Baker's Joy, so the bars don't stick.

Is a parchment paper sleeve needed to make these bars?

Not necessarily. A parchment paper sleeve is optional but makes it easier to lift the bars out. Crease the paper along the edges so the sides fold over, then hold them in place with metal binder clips so they don't drop into the bars.

Do I have to let 7 layer magic bars cool completely?

Yes. They need to cool completely to set properly. For extra firmness, cover them and chill in the refrigerator for 1-2 hours, or overnight.

Can I substitute table salt or kosher salt for the sea salt flakes?

No, I don't recommend using either one as a substitute. The sea salt flakes are an optional topping, so you can skip them if you aren't a fan of sweet-and-salty desserts.

Ingredients

  • 2 cups Graham Cracker Crumbs, about 18 full Graham cracker sheets
  • 1/2 cup Unsalted Butter, melted
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Chopped Pecans
  • 1 cup Shredded Coconut Flakes
  • 14 oz Sweetened Condensed Milk
  • 1 tbsp Sea Salt Flakes, optional topping (do not use table/kosher salt as a replacement)

Method

  1. Set an oven rack to the 2nd or 3rd position from the bottom, above center, and heat the oven to 350ºF. Lightly coat an 8-inch square baking pan with flour-based baking spray. If you like, line the pan with a parchment paper sleeve. Set it aside.
  2. Stir the graham cracker crumbs into the melted unsalted butter until fully combined, then press the mixture into the bottom of the prepared 8-inch pan so it forms an even layer.
  3. Sprinkle the chocolate chips across the base, then add the chopped pecans, followed by the coconut flakes.
  4. Pour the sweetened condensed milk over everything and spread it as evenly as you can. Don't worry if some coconut mixes in while you do this. Add a few sea salt flakes on top if you like.
  5. Bake for 20-25 minutes at 350ºF, until the top turns light golden brown.
  6. Let the bars cool completely on a wire rack, then cut them into squares.
  7. Store the bars in an airtight container in the refrigerator.
