How to Make No-Bake Rocky Road Bars

Step by step photos showing how to make rocky road bars.

This recipe is straightforward. The basic steps are:

  1. Place 1/4 cup butter (cut into pieces), 3/4 cup peanut butter and 2 cups chocolate chips in a large microwave-safe bowl.
  2. Melt the mixture in the microwave using 45–60 second intervals on medium power, stirring between each interval until smooth.
  3. Let the melted mixture cool slightly (about 5 minutes) so it won’t fully melt the marshmallows.
  4. Stir in 1 1/2 cups Rice Krispies and 3 cups mini marshmallows until evenly combined.
  5. Press the mixture into a lined 8×8 or 9×9 inch pan, then chill in the refrigerator until set.

That’s it. The whole process is quick and uses just one bowl. If you like, add chopped peanuts or use crunchy peanut butter for extra texture.

Pro tip: Line the pan with parchment paper or foil and leave an overhang. Once the bars have chilled, use the overhang to lift them from the pan for easy slicing.
