Nutella-Stuffed Single-Serve Chocolate Chip Cookie Recipe

This Nutella-stuffed chocolate chip cookie is a giant, single-serving treat: thick, chewy and oozing warm Nutella. It’s the perfect decadent late-night indulgence.

My Nutella-stuffed chocolate chip cookies are one of my favorite recipes. Each cookie combines a soft, chewy chocolate chip base with a molten center of Nutella that spills out when you take a bite—pure cookie perfection.

But when you want that indulgence without baking a full batch, this Nutella-stuffed single-serving chocolate chip cookie is the solution. It’s a large, thick cookie built for one (or to share) with a warm pocket of Nutella inside. It’s quick to prepare and satisfies intense cravings without a lot of effort.

Start by spooning a dollop of Nutella onto a lined baking sheet and freezing it until firm. Chilling the Nutella makes it much easier to enclose in the cookie dough so it won’t run out while baking.

The cookie dough is adapted from my single-serving chocolate chip cookie. You can mix everything in a small bowl with a fork. I slightly increased the flour so the cookie is thicker and holds the filling better.

Once the dough is ready, divide it so about three-quarters forms the bottom layer. Flatten that portion slightly, place the frozen Nutella dollop in the center, then cover with the remaining dough. Pinch the edges securely so the filling is fully enclosed and roll the dough into a ball.

Bake the cookie in a preheated oven at 350°F (180°C) for about 14–16 minutes, until the top looks set but still soft. After removing it from the oven, press a few extra chocolate chips on top while it’s warm for an attractive finish and extra melty pockets.

The contrast of a chewy, almost gooey chocolate chip cookie with a molten Nutella center makes this single-serving cookie an irresistible late-night treat. It’s rich and generous—perfect for sharing, though it’s also an ideal solo indulgence.

Ingredients

  • 1 1/2 tablespoons Nutella
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 7 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • pinch salt
  • 3 tablespoons chocolate chips

Instructions

  • Line a cookie sheet with parchment. Scoop about 1 1/2 tablespoons of Nutella and dollop it on the lined sheet. Freeze until firm.
  • Preheat the oven to 350°F (180°C).
  • In a small bowl, whisk together the melted butter, brown sugar and granulated sugar with a fork until the mixture is combined and the butter is incorporated.
  • Whisk in the egg yolk and vanilla until even.
  • Add the flour, baking powder and salt (measure the tablespoons without heaping). Stir until the flour is fully incorporated.
  • Stir in 2 tablespoons of the chocolate chips; reserve the remaining chips to press on top after baking.
  • Flatten about three-quarters of the dough and place the frozen Nutella dollop in the center. Cover with the remaining dough, pinch the edges to seal, and roll into a ball.
  • Bake in the center of the preheated oven for 14–16 minutes, until the top looks set. Remove from the oven and gently press the reserved chocolate chips onto the warm top.

Notes

  1. Nutella: Freeze the Nutella until firm—this makes it much easier to enclose in the dough.
