Energy bite recipes were hugely popular around 2012–2014, and even if I’m a little late to the trend, these Peanut Butter Chocolate Energy Bites are worth the wait. They’re simple, satisfying and ready in minutes — an ideal snack when you want something chocolatey and peanut buttery but still wholesome.
These bites are chewy, salty, and chocolate-forward with a natural peanut butter flavor. The texture is similar to a Lara Bar or Clif Bar, but made from whole-food ingredients you can recognize. They’re perfect for a quick pick-me-up or to stash in the fridge for an easy, guilt-free treat.
You can enjoy several of these without remorse — they’re grain free, dairy free, refined-sugar free and vegan (unless you choose to add honey). The ingredients are straightforward and easy to find: Medjool dates for sweetness, peanut butter and chopped peanuts for flavor and texture, and unsweetened cocoa powder for the chocolate element. If you prefer a touch more sweetness, add a tablespoon of honey or brown rice syrup (the latter keeps it vegan). 
Preparation is effortless: pulse everything together in a food processor, shape into small balls and chill until firm. A key tip is to make sure your dates are soft. If they’re dry, soak them in lukewarm water for 10–15 minutes, drain thoroughly and pat dry so no extra moisture dilutes the mixture. Also avoid salted peanuts, which can throw off the flavor balance.
These bites are an excellent example of how easy and delicious healthier snacks can be — just a handful of ingredients, minimal effort and big flavor. Give them a try and you might find yourself wondering why you didn’t make them sooner.

Ingredients
- 1 cup pitted Medjool dates*
- 2 tablespoons peanut butter (if natural, stir well before measuring)
- 3 tablespoons unsweetened cocoa powder (plus 1 tablespoon extra if desired)
- 1/4 cup chopped peanuts
- 1 tablespoon honey or brown rice syrup (optional)

Pulse the dates in a food processor until they break down into small pieces. Add the peanut butter, 3 tablespoons of cocoa powder and the chopped peanuts, then process until well combined. Taste and adjust: add the extra tablespoon of cocoa for a richer chocolate flavor or the honey/brown rice syrup if you prefer it sweeter. Pulse again until the mixture holds together.

Turn off the processor and form the mixture into small balls about 3/4 to 1 inch in diameter (you should get around 12–14). Place the bites on a tray and chill in the fridge or freezer for about 15 minutes to firm up.
