The base is one giant, soft and chewy peanut butter cookie. I prefer brown sugar for a deeper flavor and chewier texture. An extra egg yolk and a touch of cornstarch keep the cookie tender. Roll the dough into a circle on a parchment-lined pizza pan — leave about 1/2 to 1 inch around the edge because the cookie will spread in the oven.

Peanut Butter Cookie
- 1/2 cup unsalted butter, softened
- 1/4 cup peanut butter (not natural)
- 3/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp cornstarch
- 1/2 tsp baking soda
Peanut Butter Topping
- 1/4 cup unsalted butter, softened
- 1/2 cup peanut butter (not natural)
- 1 cup powdered sugar
- 1–2 tbsp milk or cream
- Peanut butter candies of your choice for decorating
Instructions
Make the Peanut Butter Cookie
- In a large bowl, beat together the butter, peanut butter, and brown sugar with an electric mixer until smooth.
- Beat in the egg and vanilla until combined.
- On low speed, gradually beat in the flour, cornstarch, and baking soda until just combined.
- Form the dough into a large ball, wrap it in cling film, and chill in the refrigerator for at least 15 minutes (or up to 24 hours).
- Preheat the oven to 350°F and line a 12-inch round pizza pan with parchment paper.
- With lightly floured hands, press the chilled dough into a round on the prepared pan, leaving about 1/2–1 inch around the edge for spreading.
- Bake for 12–15 minutes, or until the top looks set. Allow the cookie to cool completely before frosting.
Make the Frosting and Decorate
- In a medium bowl, beat the butter and peanut butter until smooth.
- Gradually add the powdered sugar and then the milk or cream, one tablespoon at a time, beating until you reach a fluffy, spreadable consistency.
- Spread the frosting over the cooled cookie. Top with your choice of peanut butter candies and optional drizzles of melted chocolate or peanut butter chips.
