Triple-Chip Cookie Bar Recipe: Chewy Chocolate, Peanut & Butterscotch

Somewhere between a blondie and a cookie, these Triple Chip Cookie Bars are fudgy, chewy, and packed with melty chocolate chips. Made in one bowl with no mixer, the batter takes just minutes to prepare and about 20 minutes to bake. Recently I cleaned out my cupboard and discovered a small treasure trove of half-used chocolate chip bags: dark chocolate, semi-sweet, white chocolate, butterscotch, and even Skor bits. Instead of letting them languish, I turned them into Triple Chip Cookie Bars.

These bars are chewy and fudgy, loaded with chocolate chips, and striking the perfect balance between blondie and cookie. They’re also effortless to make: no standing mixer required, no chilling the dough, and because they’re made in a pan, you can include more chocolate chips than in standard drop cookies.Side shot of a hand holding a triple chip cookie bar. To prepare the batter you simply melt butter, whisk in brown sugar, then add an egg and vanilla. Fold in the flour, baking powder, and salt, then stir in a generous mix of chocolate chips. The whole process takes about ten minutes from start to pan.

There’s no shaping dough balls, no sticky fingers—just press the batter into an 8 x 8-inch pan and bake until the top is set. The result is thick, soft squares studded with molten chocolate.

I used a mix of semi-sweet, white chocolate, and butterscotch chips, but you can vary the combination however you like: peanut butter chips with chocolate, milk and dark chocolate together, or any other chip mix you prefer. Triple Chip Cookie Bars

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 tablespoon vanilla
  • 1 1/4 cup all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup assorted chocolate chips, I used a mix of semi-sweet, white chocolate, and butterscotch

Instructions

  • Preheat the oven to 350°F (175°C).
  • Line an 8 x 8-inch square baking pan with aluminum foil and grease it with non-stick spray.
  • In a medium bowl, whisk together the melted butter and brown sugar until combined. Stir in the egg and vanilla.
  • Add the flour, baking powder, and salt, mixing until just combined. Fold in the assorted chocolate chips.
  • Pour the batter into the prepared pan and bake for 20–25 minutes, or until the top is set and a toothpick inserted near the center comes out with a few moist crumbs.
  • Allow the bars to cool completely in the pan, then lift out with the foil and cut into squares.
