For the Topping

Instructions

Brownie

  • Preheat oven to 350°F (175°C). Lightly grease a 9-inch springform pan. If the pan’s seal is weak, wrap the outside in foil to prevent leaks.
  • In a medium saucepan over low heat, melt the butter and chopped chocolate together, stirring until smooth.
  • Whisk in the granulated sugar. Remove from heat and let cool about 5 minutes.
  • Whisk in the eggs and vanilla until combined.
  • Stir in cocoa, flour, and salt until no streaks remain. Sift cocoa if it’s lumpy.
  • Pour batter into the prepared pan and bake 20–25 minutes, until the top is set and the edges pull slightly away. Cool completely in the pan.

Cream Cheese Topping

  • Beat the softened cream cheese and butter until smooth. Add salt, then beat in powdered sugar 1/2 cup at a time until you reach the desired sweetness and texture.

  • Run a thin knife around the brownie’s edge, then unclamp the springform ring. Keep the brownie on the metal base for serving if desired.
