How to Make Rocky Road Fudge
This recipe is incredibly simple and can be made in the microwave — no candy thermometer required. You’ll need just four ingredients:
- 2 1/4 cups semi-sweet chocolate chips
- 1 (14 oz) can sweetened condensed milk (not evaporated)
- 1 cup salted peanuts (unsalted work fine)
- 2 cups mini marshmallows
Start by placing the chocolate chips and sweetened condensed milk in a large heatproof bowl and stirring so the chips are coated. Microwave on medium power for 45–60 seconds, remove and stir. Continue microwaving in short bursts—stirring between each—until the chocolate is almost melted, then stir until fully smooth.
Using medium power is important. If you microwave on high the chocolate can “bake” instead of melt, which may leave the fudge grainy and prevent it from setting properly. When the chocolate is glossy and smooth, fold in the peanuts and marshmallows. If the chocolate is very hot the marshmallows may soften or swirl into the mixture, which is fine but will change the look slightly.
Pour or spoon the mixture into a lined 9×13-inch pan (parchment or foil with the edges left to lift the fudge out later). Smooth the top, then let it set until firm — about 2 hours at room temperature or 1 hour in the fridge. Once set, lift the fudge from the pan and cut into pieces.
