Ingredients

  • 1 cup pitted Medjool dates*
  • 2 tablespoons peanut butter (if natural, stir well before measuring)
  • 3 tablespoons unsweetened cocoa powder (plus 1 tablespoon extra if desired)
  • 1/4 cup chopped peanuts
  • 1 tablespoon honey or brown rice syrup (optional)

Instructions

  • Pulse the dates in a food processor until they break down into small pieces. Add the peanut butter, 3 tablespoons of cocoa powder and the chopped peanuts, then process until well combined. Taste and adjust: add the extra tablespoon of cocoa for a richer chocolate flavor or the honey/brown rice syrup if you prefer it sweeter. Pulse again until the mixture holds together.
  • Turn off the processor and form the mixture into small balls about 3/4 to 1 inch in diameter (you should get around 12–14). Place the bites on a tray and chill in the fridge or freezer for about 15 minutes to firm up.

Notes
