I love making giant single-serving cookies—they’re perfect when a sweet craving hits. This peanut butter version is thick, with a true peanut butter taste and slightly crisp edges. The center stays soft and chewy, almost gooey, and it’s loaded with chocolate chips and Reese’s Pieces (or your favorite mix-ins).

Making a Single Serving Peanut Butter Cookie
This recipe comes together in one bowl with minimal fuss:
- Whisk 2 tablespoons melted butter, 2 tablespoons peanut butter and 1/4 cup light brown sugar until smooth. If you don’t have light brown sugar, use 2 tablespoons dark brown sugar and 2 tablespoons white sugar.
- Whisk in 1 large egg yolk and 1/4 teaspoon vanilla extract. Use only the yolk, not the whole egg.
- Stir in 6 tablespoons all-purpose flour and 1/8 teaspoon baking soda until combined. Use a fork to mix to help avoid lumps. Make sure flour is measured level (not heaping).
- Fold in chocolate chips and/or Reese’s Pieces—about 3 tablespoons total. I used 2 tablespoons chocolate chips and 1 tablespoon Reese’s.
- Shape the dough into a ball and place it on a lined baking sheet.
- Bake at 350°F (175°C) for 12–14 minutes, until the top looks set and begins to crack. After baking, press a few extra chocolate chips or Reese’s on top for a finishing touch.

Ingredients
- 2 tablespoons unsalted butter (28 grams), melted
- 2 tablespoons peanut butter
- 1/4 cup light brown sugar (50 grams), or 2 tablespoons white sugar and 2 tablespoons brown sugar
- 1 large egg yolk, discard the white
- 1/4 teaspoon vanilla
- 6 tablespoons all-purpose flour (47 grams), level off the top
- 1/8 teaspoon baking soda
- 4 tablespoons chocolate chips, or Reese’s Pieces or a combination

Preheat the oven to 350°F and line a cookie sheet with parchment paper or a silicone baking mat.

Whisk together the melted butter, peanut butter and sugar until smooth.

Whisk in the egg yolk and vanilla extract, using only the yolk.

Stir in the flour and baking soda until smooth. Measure flour level, not heaping.

Fold in 3 tablespoons of chocolate chips and/or Reese’s, leaving about 1 tablespoon for topping.

Form the dough into a ball about 3 inches in diameter. Bake for 12–14 minutes or until the top is set.

Remove from the oven and press the remaining tablespoon of chocolate chips or Reese’s on top. Let cool briefly before serving.
Notes
- Peanut Butter: Use smooth, commercial-style peanut butter for best texture. Natural or homemade peanut butter can separate and affect the result.
- For 2 Cookies: Divide the dough in half and bake 10–12 minutes, until tops are just set.
