- 6–8 tbsp Ice Cold Water

- 1/8 cup Old-Fashioned Oats
- 1/8 cup All-Purpose Flour
- 1/8 cup Light Brown Sugar
- 1/8 tsp Salt
- 1/8 cup Slivered Almonds (optional)

- 4 medium Fresh White Peaches, peeled, pitted, and sliced
- 1/2 cup Fresh Blueberries, washed and dried
- 1/4 cup Granulated Sugar
- 1 tsp Lemon Juice
- 1 tsp Vanilla Extract
- 1 tbsp Cornstarch
- 1 Egg, whisked (for brushing the pastry)

- In a large bowl, combine flour and salt. Cut in cold cubed butter and shortening with a pastry blender or two forks until pea-size pieces remain. Add ice-cold water one tablespoon at a time until dough forms a ball. Divide into four equal portions, pat into 1–1½” discs, wrap tightly, and chill at least 1 hour.

- On a lightly floured surface, roll each chilled dough disc to about a 7″ circle and transfer to the prepared baking sheet.
- Spoon filling into the center of each circle using a slotted spoon to drain excess juices, leaving a 2″ edge.
- Fold the pastry edges toward the center and gently press to seal. Brush the edges with the whisked egg and sprinkle crumble topping over the fruit.
- Repeat for all galettes. Bake 35–40 minutes at 400ºF, until pastry edges are golden brown.
- Allow to cool slightly and serve warm with vanilla ice cream.
