Soft, chewy peanut butter cookies dipped in glossy chocolate and finished with chopped peanuts. If you want a cookie that’s all about peanut butter, these chocolate-dipped peanut butter cookies are for you. 
Peanut butter has always been a favorite of mine — morning motivation, afternoon snack, birthday treat, and a late-night nibble. It’s also one of my go-to baking ingredients.
When I was craving peanut butter and spotted a bag of lonely chocolate chips in the pantry, these chocolate-dipped peanut butter cookies were the obvious solution.
Peanut butter + chocolate = bliss. These cookies feel a bit more special than standard peanut butter chocolate chip cookies and are a little prettier to serve. 
What I especially love about this recipe (besides the flavor) is:

Yes — no chilling is necessary. If you prefer thicker cookies you can chill the dough, but the recipe produces wonderful cookies straight from mixing to baking, so you can satisfy your craving quickly. 
To make the dough, beat together the peanut butter, butter, and sugars until smooth, then add the eggs and vanilla. Mix in the dry ingredients on low speed until just combined.
I like using a cookie scoop so the dough balls are uniform, but you can portion them by eye. Bake the cookies for 8–10 minutes, or until the tops are just set — not overbaked — then let them cool on the sheet for 10 minutes before transferring to a wire rack.
For the chocolate coating I used dark chocolate chips with a touch of oil to achieve a glossy, smooth finish. Melt the chocolate gently in a double boiler or in the microwave in 30-second bursts on medium, stirring between each burst to prevent overheating. 
Dip half of each cooled cookie in the melted chocolate, then sprinkle with chopped peanuts. You can also drizzle chocolate over the top if you prefer. The result is an irresistible cookie that tastes like a peanut butter cup in cookie form.

Ingredients
- 1 cup unsalted butter, softened
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 3/4 cup all purpose flour
- 1 tbsp cornstarch
- 1/2 tsp baking soda
- 1 tsp salt
- 2 cup chocolate chips, your favorite variety
- 1/3 cup chopped peanuts
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, beat the butter, peanut butter, and both sugars with an electric mixer until smooth and lump-free.

Beat in the eggs and vanilla until combined.

On low speed, add the flour, cornstarch, baking soda, and salt, mixing until just incorporated.

Scoop dough into 1.5–2 tablespoon balls and place at least 2 inches apart on a parchment-lined baking sheet.

Bake 8–10 minutes, or until the tops are just set.

Cool on the sheet for 10 minutes, then transfer to a wire rack to finish cooling.

Melt the chocolate chips with a little butter or oil in a double boiler, or in 30-second microwave bursts, stirring between each burst until smooth.
