How to Make Chocolate Vanilla Layered Rice Krispie Treats

My best rice krispie treats recipe is a household favorite. It's my go-to when I'm juggling a million things, since it takes almost no time to make. Sometimes, though, I crave the chocolate version, so I wondered why not combine the two, with a layer of melted marshmallows in between? I know, your mind is blown, right?????

The Chocolate Rice Krispie Treats Layer

The first layer of these chocolate-vanilla rice krispie treats is chocolate. The ingredients are similar to the classic, but this layer adds unsweetened cocoa powder, chocolate chips, and chocolate rice krispies cereal. It's a lot of chocolate, but it's so worth it!

The Marshmallow Layer

The middle layer is made of gooey melted marshmallows and a little melted butter, and that's all! Spread it over the chocolate layer, then move on to the classic one.

The Classic Rice Krispie Treats Layer

The final layer is classic rice krispie treats, topped with a handful of extra mini marshmallows at the very end!

I made all three layers in one large pot, which kept cleanup easy between steps. The best part is that there's no oven or mixer involved! The only hard part is waiting at least one hour for them to set before cutting them into squares!

Ingredients

chocolate rice krispie treats layer

  • 4 tbsp Unsalted Butter
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/4 tsp Vanilla Extract
  • 10.5 oz Mini Marshmallows (1 bag)
  • 12 oz Milk Chocolate Chips
  • 5 cups Chocolate Rice Krispies Cereal

marshmallow layer

  • 2 tbsp Unsalted Butter
  • 10.5 oz Mini Marshmallows (1 bag)

original rice krispie treats layer

  • 8 tbsp 1 stick Unsalted Butter, melted
  • 2 tsp Vanilla Extract
  • 1/8 tsp or Pinch of Salt
  • 21 oz Mini Marshmallows (2 bags), divided (1 1/2 bags for the initial mixture, the remaining 1/2 bag for the end)
  • 9 cups Rice Krispies Cereal

Method

  1. Line a 9 x 13 inch rectangular pan with aluminum foil, then lightly butter or spray the inside with baking spray. Set aside. Non-stick aluminum foil also works.
  2. In a large pot over medium heat, melt the unsalted butter, then stir in the vanilla extract and unsweetened cocoa powder.
  3. Lower the heat and stir in the mini marshmallows until completely melted.
  4. Stir in the chocolate chips until smooth.
  5. Take the pot off the heat and stir in the chocolate rice krispies cereal until fully combined.
  6. Scoop the chocolate rice krispie mixture into the prepared 9 x 13 inch pan and press it down with a spatula. Spray the bottom of the spatula with baking spray so the mixture won't stick to it.
  7. Wipe out the pan with a paper towel so you can use it for the next layer.
  8. In the same pot over low heat, melt the unsalted butter, then stir in the mini marshmallows until melted.
  9. Pour the marshmallow mixture over the chocolate layer and spread it out with the sprayed spatula.
  10. You can wipe the pot clean now or leave it as is, since you'll use it again for the classic layer.
  11. In the same large saucepan, melt the unsalted butter over medium heat, then stir in the vanilla extract and salt.
  12. Reduce the heat to low and stir in 1 1/2 bags of mini marshmallows until melted.
  13. Turn off the heat, add the rice krispies cereal, and stir until everything comes together.
  14. Stir in the remaining 1/2 bag of mini marshmallows just until combined. You want them to stay mostly whole, not melted.
  15. Scoop the mixture into the prepared 9″x 13″ pan over the marshmallow and chocolate layers, then press it down with the sprayed spatula.
  16. Wait at least 1 hour before cutting them into squares.
  17. Store them in an airtight container at room temperature for up to 5 days, though they'll likely be gone well before then!
